Arman considérait la cuisine comme un art, je me rappelle des débats furieux pour déterminer si il était majeur ou mineur, pour lui en tout cas la question ne se posait pas. Il se régalait à comparer les termes des deux métiers, à dire qu'au fond ils faisaient la même chose, pour lui composer des couleurs ou des saveurs c'était de la création pure... Manger, il aimait, comme la vie, à pleine dents, et repu il regardait la tablée et la gratifiait d'un "Ah! Ca va mieux!..."
Arman regarded cooking as an art, I remember furious debates to determine if it was a major or minor one, for him anyhow there was no question. He rejoiced himself in comparing the terms of the two crafts, to conclude that the bottom line was that they were doing the same thing, in his mind composing with colors or with savours were both pure creation... He enjoyed eating like life, in big bites, and when sated he was taking a look round the table and gratifying it with a "Ah! that feels better!..."
